Today I am sharing one of my family's favorite recipes. We usually make these muffins 4x per year at least and although it can make like a lot they are usually gone pretty quickly. I know I ate about 10 mini muffins this morning and the day was just getting started.
This recipe is great to share because it makes a lot, something like 4 dozen regular size muffins, maybe more.
Here's what you'll need:
- 3 cups sugar
- 1 cup oil
- 4 large eggs
- 1 tbsp and 2 tsp baking soda
- 1 tbsp and 1 tsp cinnamon
- 2 tsp salt
- 17 oz fruit cocktail undrained
- 5 cups flour
- 1 quart buttermilk
- 15 oz raisin bran cereal
- And I added about 1 tbsp of flax seed
- Combine all ingredients (I did wet and dry then combined the two)
- Beat 2 min
- Spoon into lightly greased muffin pans, 2/3 full.
- Bake at 400degrees for about 16-18 minutes.
- Remove immediately from pan.
- Enjoy!
You can see my new lamps I bought from Target in the background on the counter. They're my first purchase and project as part of my master bedroom makeover that's on my deployment goals list. Haven't decided how I am going to spruce them up but I'll let ya know.
And here's all my baked goods packed up and ready to go. I really hope these muffins make it there because I know lovie likes them, but I guess there's only one way to find out. I did put a note in there reminding him to check their quality before he shares and gets the whole detachment sick. That would be no bueno.
