Acorn Squash for Brunch

Hi again!
The other day when I was at the store I saw the squash was on sale so I picked up an acorn squash. Yum!



I cut it open, (cleaned out the guts), slapped some butter on that baby, and sprinkled with brown sugar and cinnamon. Delish!!

To cook:
  • Heat oven to 350
  • Put in dish and fill with 1/2in of water
  • Cover and cook for 50min
  • Uncover and cook for another 10min
  • Enjoy!
I love fruits and veggies and when lovie is gone, I pretty much eat vegetarian. Not on purpose, but I barely feel like taking the time to cook meat for just myself. That is, in between my Trader Joe's visits!! I only go there on special trips every once in a while. I need to make it a point to go more often. 



And yes that is melted butter pooling in the middle just calling your name. =)
