One Potato, Two Potato

Galen is 4 months old and has become quite the eager eater! So far he's had apple baby food and banana baby food. I wanted to try a vegetable so off to Walmart we went!
Here he is in the produce isle with Aunt Tiny.

After reading a little bit about what veggies to start first I decided on sweet potatoes.

This is one of the easiest things to do for baby food! I picked up three sweet potatoes for $0.88 ea. and got to work. Set the oven at 350, poke a few holes in them and pop those babies in there for about 35-40 min. but as with a newborn, I got sidetracked and they were in there for a little over an hour and still turned out great! I wrapped mine in foil but my mom cooks her sweet potatoes bare in the oven so it's up to you.

Once cooked the peel is very easy to peel off.

It just gets easier and easier from here! I added about 1.5 to 2 cups of water for each potato since Galen is a very beginner eater, but add as much or as little water as your baby needs. Or no water and use the puree for sweet potato pie!!! Yum!

I filled up two mini mason jars and has this much left over after just one potato!

I put some in little containers that I put in the fridge to eat this week, and the rest I filled up an entire container for the freezer to be used over the rest of the month. I'm not sure if every baby food will be cheaper to make than to buy but these definitely were! The baby food I would buy is about $1 per jar/plastic container so for about $3 we ended up with what I'm guessing to be at least 15 servings and I know that the only things in there are fresh sweet potatoes and water. Can't beat it!
